Healthy Chewy Granola Bars
We love these healthy granola bars, packed with superfoods and wholesome ingredients. They are great for taking along with you to school, work or on an adventure in the woods. This recipe was created by Day, one of the Harmonic Arts team members. We hope you enjoy!
2 cups oats
2 cups coconut shredded
1/2 cup rice bran
1/2 cup wheat germ
1/4 cup flax
1 cup flour
3/4 cup coconut palm sugar
1 tsp cinnamon powder
1/2 cup chopped almonds
1/2 cup cacao nibs
1/2 cup raisins
Preheat the oven to 325°F
Lightly oil a 9×13″ baking pan.
Mix all the dry ingredients together in a large bowl.
In a small bowl, blend the wet ingredients thoroughly.
Make a well in the center of the dry ingredients, pour in the wet and stir, turning over until all the dry ingredients are evenly moistened.
Press tightly into prepared pan patting the top flat.
Bake 20-25 minutes, until the edges start to brown.
Remove from oven, cool 5 minutes and cut with a pizza cutter or by pressing with flat edge (pancake turner). Don’t drag a knife through it as it is quite soft, and don’t let it cool too much before cutting or it will be very difficult to get through.
Once they’re cut, let them cool completely before removing them from the pan. Gently separate on the cut lines and store in an airtight container.
Makes about 24 bars.
Gluten free – Substitute rice flour or other gluten free flour blend for wheat flour, and rice and oat bran for the wheat germ and wheat bran.
Dairy free – Pour 2 Tbsp boiling water over 1 Tbsp flax seed. Stir and let stand 5 minutes. Use in place of the egg.
Flavour Variations – Substitute the almonds, nibs and/or cranberries for your favourite nuts and dried fruits. Some combinations we enjoy are dried banana chips with chocolate, dried apple and cashew and cranberry with orange peel.
