For thousands of years coconut has been a celebrated food among Asian and Pacific cultures. Coconut contains an abundance of vitamins, minerals, and trace elements including zinc, selenium, iodine, sulfur, and manganese. It is rich in natural electrolytes, particularly magnesium and potassium, which aid in maintaining muscle and nerve function. Coconut oil is an essential ingredient in South Indian cuisine, and can be used as a replacement for traditional food preparation oils. It can also be used topically to moisturize the skin and hair, and is becoming increasingly popular in body care products.
Coconut has garnered much attention over recent years because of its content of medium-chain triglycerides, also known as MCT. Once absorbed by the intestines, this MCT fat goes directly to the liver where it is either immediately used as an energy source, turned into ketone bodies which are later used for energy, or excreted by the body if in excess. This means that the energy derived from coconut oil never turns into body fat, even when eaten in excess. In fact, MCT fat is “thermogenic” which means that eating it tends to increase energy expenditure (fat burning) compared to the same amount of calories from other fats. Several studies have confirmed that coconut fat is ideal for those concerned with weight management, since it allows them to burn more calories than the fat contains.
