Cinnamon is one of the world's oldest spices, used for a variety of purposes in ancient Egypt and throughout the middle ages. It comes from the bark of the Laurel tree, which when dried, rolls into quills that can be used as sticks or ground into powder. Cinnamon contains a variety of minerals such as calcium, magnesium and potassium, and is an excellent source of fiber. It also has many anti-microbial properties and has proven to be a great preservative. Cinnamon is used to treat colds and awaken the immune system, and is believed to improve energy, vitality and circulation. Since it helps slow the rate at which your stomach digests food, it can also help with lowering blood sugar levels after eating. Cinnamon is great for baking but can also be added to curries and stews, and brewed into teas or mulled wine.
