Sage is an evergreen undershrub that grows wild in areas with limestone and very little soil, such as the mountainous regions surrounding the coast of the Mediterranean as well as the dry, arid areas of the British Columbia interior. It contains volatile oil, tannin and resin and is known as a stimulant and an astringent. Its tonic properties help purify the blood. Sage is known to help gum and throat problems such as canker sores, sore throat, swollen glands, and hoarseness. It is said to prevent age related mental decline and improve memory, and when used in a salve it helps arthritic pain and mild sprains. It is also highly regarded as an effective remedy for the heat surges of menopause. Sage renders fatty meats more digestible by stimulating bile release. It is also used to flavour meats, poultry, soups, cheese, and vegetables.
