Matcha Cashew Ice Cream

We all scream for ice cream! This dairy-free, healthy Cashew Matcha Ice Cream is easy to make at home - a treat you can feel good about.

You'll Need
1 c cashews, soaked overnight and drained
2 frozen bananas
1 tbsp Harmonic Arts Matcha Mind Elixir
¼ c coconut milk
¼ c maple syrup or honey
2 tbsp lemon juice

Directions
1. Blend all ingredients in a blender or food processor until thick and creamy.
2. Pour into a loaf pan, and freeze 4 hours before serving. (If you freeze it longer, remove from freezer 1/2 hr before serving.)
3. It can also be frozen in popsicle molds for easy to serve bars!!

Makes 3 cups.
